Tater Tot Nachos

Nope, you're not dreaming. This really happened. I topped freshly baked, crispy Tater Tots with melted Mexican cheese, seasoned beans, salsa, avocado, cilantro, and green onions. Sure, corn chips are cool, but crisp-tender Tater Tots? Beyond.

And, I doubt you'll find an easier dish on this planet. You simply cook the tots as instructed, top them with a few nacho-inspired toppings and give them a few more minutes in the oven. That's it!

I made these as an appetizer, but they would make a fun, family side dish too. Actually, top the cooked tots with seasoned ground beef and now you have a complete meal!

Tater Tot Nachos

1 bag frozen Tater Tots or frozen potatoes of choice (French fries work too)
1 cup shredded Mexican cheese blend
1/2 cup salsa of choice
1/3 cup seasoned black beans (from a can)
1 avocado, pitted and diced
Fresh cilantro leaves for serving
Chopped green onions for serving
Additional topping ideas: 
Sour cream
Guacamole
Black olives
Jalapenos

Cook the Tater Tots according to the package directions. Remove the tots from the oven, and keep the oven on.
Transfer the potatoes to a shallow baking dish and top with the cheese, salsa and black beans. Return the potatoes to the oven and bake for 3 to 5 more minutes, until the cheese melts.
Top with cilantro and green onions (and any other topping you want) and serve hot.
