Happy Valentine's Day!




You'll love these gems! A little help from a cake mix and they're the best cookies ever!
 
Valentine Red Velvet Cookies
Cooking spray
16 Oreo cookies
2 tablespoon unsalted butter, melted
1 box red velvet cake mix (I used Duncan Hines)
2 large eggs
6 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
1 teaspoon cornstarch
3/4 cup powdered/confectioners' sugar
Frosting
8 ounces cream cheese, softened at room temperature
4 tablespoons unsalted butter, softened at room temperature
1 teaspoon vanilla extract
2 cups powdered/confectioners' sugar
Sprinkles

Preheat the oven to 350 degrees. Coat 3 mini muffin pans with cooking spray (use a decent amount so the cookies don't stick).
Place the Oreos in a food processor and process until they become fine crumbs. Add the 2 tablespoons melted butter and process until blended. Press the mixture into the bottom of the prepared muffin cups. Set aside.
In a mixing bowl, combine the cake mix, eggs, 6 tablespoons melted butter, vanilla, and cornstarch. Mix until blended. Gradually add the 3/4 cup powdered sugar and mix until just blended. Spoon the mixture over the Oreo crust.
Bake 10-12 minutes, until a wooden pick comes out clean. Cool on wire racks for 30 minutes before frosting.
To make the frosting, in a mixing bowl, combine the cream cheese and softened butter. Mix until blended. Blend in vanilla. Gradually add the 2 cups powdered sugar and mix until blended and smooth. Use a pastry bag or butter knife to ice the cookies. Top with cookies with sprinkles and dig in!
